Corn and Black Bean Salsa
Posted on August 5, 2010
To use the word love, does not describe how we feel about fresh salsa in my house! We hoard it just for ourselves. Company doesn’t get the good stuff. And studies show that salsa is the #1 condiment in the U.S.!
This salsa great at summer picnics with baked tortilla chips or on fish tacos straight off the grill.
It’s low fat, high fiber, fresh with a nice kick from the jalepeno. Enjoy!!
Ingredients:
2 cans corn
2 avocados
2 cans black beans
1 large tomato
1/4 C cilantro
1 red onion
1 lime juiced
1 jalapeno (seeded and diced)
salt and pepper to taste
Process:
In a large bowl: Cut the avocado into small chunks – juice the lime on top (it keeps the avocado from oxidizing)
Chop tomato into small chunks
Chop onion into small chunks
Add the rest of the ingredients and stir.

Oh!! Thank you so much for reminding me of this recipe!! I have made it in the past and I love this one, it is SO good, and I usually put in LOTS of cilantro, looks like I know what I will be having this weekend!! 🙂
