A spin-off of nachos served at a popular restaurant, just much better for the waistline!<\/p><\/blockquote>\n<p style=\"padding-left: 30px;\">4 corn tortillas<br \/>\n1 cup refried beans, warmed<br \/>\n1\/2 cup shredded\u00a0 cheddar cheese<br \/>\n16 jalapeno rings<\/p>\n<ol>\n<li>Heat oven to 400 degrees. Cut tortillas into quarters. Spray cookie sheet and the top of the tortilla with cooking spray. Cook for 5 minutes or until tortillas are crisp.<\/li>\n<li>Top each tortilla with 1 tablespoon beans, 1 tablespoon cheese and a jalapeno ring. Return to oven until cheese melts.<\/li>\n<li>Remove from oven.
