My Favorite Salad<\/b><\/p>\n

We have a great resource on Wednesdays at Tower Square and great for Meatless Mondays \u2013 The Farmer\u2019s Market!\u00a0 The Farmers Market brings in seasonal, fresh produce from local farms. And the price is right!<\/p>\n

I always buy the baby butter head lettuce and another green of choice (this time red leaf romaine).<\/p>\n

Then I looked in my fridge and my cupboard for what I had to make a fabulous salad, that both me and my husband would enjoy (note: extremely picky eater).\u00a0 I had feta cheese, pepitas (pumpkin seeds), cherry tomatoes (that I picked up from the Farmer\u2019s Market), carrots, pears, apple cider vinegar and olive oil.<\/p>\n

I roasted the pepitas in a fry pan until golden brown (about 2 minutes) and let them cool.<\/p>\n

Chopped the lettuce, split the tomatoes in half, julienned the carrots, and finely diced the pears. Put them all in a bowl. Added the crumbles of feta, a tablespoon of apple cider vinegar and a drizzle of olive oil. Sprinkled the pepitas on top and finish with a dash of salt and a grind of pepper.1<\/p>\n
