I love the cheesy chicken enchiladas, empanadas and Quesadillas. And with Cinco de Mayo right around the corner, I challenged myself (and to appease my diet), to find something that was healthy and yummy. Try this Corn and Black Bean Salsa with home made tortilla chips!<\/p>\n<p>2 cans corn<br \/>\n2 avocados<br \/>\n2 cans black beans<br \/>\n1 large tomato<br \/>\n\u00bc C cilantro if you prefer)<br \/>\n1 vidala or red onion<br \/>\n1 lime juiced<br \/>\n\u00bc cup of vinegar<br \/>\nsalt and pepper to taste<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>1. In a large bowl: Cut the avocado into small chunks &#8211; juice the lime on top<br \/>\n2. Chop tomato into small chunks<br \/>\n3. Chop onion into small chunks<br \/>\n4. Add the rest of the ingredients.<\/p>\n<p>Homemade tortilla chips<br \/>\n1 package of corn tortilla<br \/>\nnon stick spray<br \/>\nsalt<\/p>\n<p>1. Preheat oven to 400 degrees.<br \/>\n2. Cut tortillas into triangles<br \/>\n3. Mist top of chips with non stick spray<br \/>\n4.
