Green Goddess Dressing (lightened up)
Posted on February 13, 2015
I always wanted to make a green goddess dressing.
Today on T.V. I watched a chef make a green goddess dressing. Let’s just say it was not on my diet plan. So, for the mayo she used, I used an avacado. For the sour cream, I used plain Greek low fat yogurt.
Here is my recipe:
Ingredients
1 medium avocado
3 tablespoons plain Greek low fat yogurt
1 garlic clove, finely chopped
1 oil-packed anchovy
1 half of a fresh lemon (juiced)
3 tablespoons chopped fresh Italian parsley
2 tablespoons chopped fresh tarragon
2 bunches of scallions
½ cup olive oil
Directions:
Blend first 8 ingredients in food processor until pureed. With machine running, gradually add oil through opening at the top; blend well. Add salt and pepper to taste. Cover and chill at least 2 hours. When ready to use, take dressing out of refrigerator and let stand for 30 minutes. Re-whisk dressing before serving.
