The Farmer’s Market at Tower Square

My Favorite Salad
We have a great resource on Wednesdays at Tower Square and great for Meatless Mondays – The Farmer’s Market! The Farmers Market brings in seasonal, fresh produce from local farms. And the price is right!
I always buy the baby butter head lettuce and another green of choice (this time red leaf romaine).
Then I looked in my fridge and my cupboard for what I had to make a fabulous salad, that both me and my husband would enjoy (note: extremely picky eater). I had feta cheese, pepitas (pumpkin seeds), cherry tomatoes (that I picked up from the Farmer’s Market), carrots, pears, apple cider vinegar and olive oil.
I roasted the pepitas in a fry pan until golden brown (about 2 minutes) and let them cool.
Chopped the lettuce, split the tomatoes in half, julienned the carrots, and finely diced the pears. Put them all in a bowl. Added the crumbles of feta, a tablespoon of apple cider vinegar and a drizzle of olive oil. Sprinkled the pepitas on top and finish with a dash of salt and a grind of pepper.1
