Grilled Pizza

It’s grilling season!! I thought it would never get here.
During this time I try to experiment with as many foods as I can on the grill. There is something about that smoky favor that perfumes the food that can’t be achieved without firing up the grill. With that said, I decided I would try to make grilled pizza using fresh ingredients from my local farmer’s market.
It was pretty easy and here’s how I did it:
With my electric mixer I dissolved,
- 1 package of yeast (rapid rise)
- 1 packet of SPLENDA® ( yeast LOVES sugar) in 1-1/2 cup of warm water (100-110 degrees)
- 1/2 of whole wheat flour
- 2-1/2 cups of semolina flour (or you can use white all purpose)
I waited for the yeast to start foaming (that means I didn’t accidentally kill it).
Using the dough hook, I added:
Flour 1/2 cup at a time, add 1/2 cup of whole wheat flour and 2-1/2 cups of white flour to the mixer, being careful not to exceed 3 cups of flour.
When the dough came together, I removed it from the bowl and kneaded it into a smooth ball. I coated the bowl with olive oil and returned the dough to it. Then, I let it rise for 1 and 1/2 hours.
Meanwhile I assembled the fresh vegetable toppings that I picked up at my local farmer’s market and preheated the grill to 400 degrees.
I rolled out 1/2 of the dough to a nice, thin crust. I laid it on the grill and cooked it for 3 minutes on one side and flipped it for another 3 minutes.
I added the sauce and the fresh toppings, closed the lid, and after 5 minutes, we had a crispy crust and melted cheese.
So good and so worth it!
