Applesauce Banana Bread

Hot humid weather seems to speed up the aging process of bananas. I bought a bunch of bananas on Thursday and by Saturday they were brown. My mother was famous for using applesauce in everything she baked, in lieu of butter or oil.
So I Googled Applesauce Banana Bread. And I found this recipe http://www.food.com/recipe/applesauce-banana-bread-151301. Which sounded great until I read 1 CUP OF SUGAR!! What!? Are you crazy? Brown bananas are naturally sweet – this quick bread doesn’t NEED ANY SUGAR! So I omitted the sugar and saved a 100 calories and 25 grams of carbohydrates!! It was moist and delicious! And a lot more exciting than the boring light English Muffin I eat everyday.
Ingredients
4 bananas, ripe
1/2 cup applesauce
1 teaspoon vanilla extract
2 eggs
1 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon salt
2 cups flour
Directions:
1. Preheat oven to 350.
2. Place bananas in food processer until bananas are mashed.
3. Add applesauce and eggs and beat well.
4. Add remaining ingredients and mix well.
5. Pour into 9×5 loaf pan that has been misted with cooking spray.
6. Bake for 45 minutes, or until wooden toothpick inserted in center comes out clean.
7. Remove from oven and let stand 10 minutes before removing from pan, cool on wire rack.
